Quality

1788 - Australian Black Angus cow

It begins with origin. It ends with perfection.

The foundation of extraordinary beef doesn’t lie in a factory, but on the land. On the sun-drenched plains of New South Wales and Queensland, our cattle are raised the right way: with space, calm, and respect. Here, they live freely for at least 26 months, grazing on green pastures with access to clean water and natural feed. Farmers go to great lengths to ensure the animals live as stress-free as possible. This not only supports animal welfare, but also contributes to the exceptional flavor of the beef.

This environment is the foundation of 1788. A place where nature and craftsmanship come together. A place where quality is never a coincidence, but the result of careful choices.

Selection of the best cattle breeds

At 1788, we work exclusively with the finest breeds:

- English Crossbreeds
- Black Angus
- Wagyu

These breeds are chosen for their genetics, meat structure, and growth potential. They are raised according to the highest standards of animal health and welfare.

Nutrition as refinement

After the grazing phase, the finishing period takes place in specialized feedlots. Here, the cattle are given a balanced diet of grain, grass, and corn.

- Black Reserve: minimum 120 days grain fed
- Black Angus: minimum 130 days grain fed
Platinum Black: minimum 200 days grain fed
- Wagyu: minimum 300 days grain fed

This diet creates the distinctive marbling and rich flavor that set 1788 beef apart.

Marbling: the difference lies within

The fine white lines of fat, known as marbling, make 1788 beef irresistibly tender, juicy, and flavorful. Our crossbreeds and Black Angus achieve an impressive Beef Marbling Score (BMS) of 2 to 6+. Our Wagyu even reaches scores of 4 to 9+, with a sublime balance of fat and structure.

Aging: time as an ingredient

All our beef undergoes a minimum 28-day aging process in vacuum packaging (wet-aging). During this time, natural enzymes develop flavor, enhance tenderness, and preserve weight. This process takes place during the chilled journey from Australia to Europe. Here, time literally adds to taste.

Care for animals and nature

Animal welfare is our top priority. The cattle live in herds, calves stay with their mothers for a long time, and transport is handled with minimal stress. No antibiotics or growth hormones are used. We deliberately choose regions with a temperate climate and a natural balance between land use and animal health. In this way, we combine quality with responsibility.

Certified trust

1788 guarantees controlled quality. Our beef is certified and audited by leading authorities:

Every step of the supply chain is transparent and fully traceable, from farm to fork.

Quality can be tasted, but it begins with knowing where it comes from.

1788 brings together the best of Australia in one powerful story: honest, thoughtful, and unforgettable in flavor. No shortcuts. No compromises. Only the highest standard, time and again.
